职位介绍 :Head Chef Main purpose of the job: 主要工作目标 Ensure a smooth operation of all kitchen outlets, responsible for a proper efficiency and profitable functioning 确保厨房运营顺畅高效及盈利 Job Description: CUSTOMER SATISFACTION 客人满意度 1.1 Ensure all units employees in the kitchen consistently demonstrate effective and efficient production, aiming at a smooth workflow in the kitchen. 确保厨房内每一环节的员工一直保持高效工作使厨房工作顺畅。 1.2 Liaise and communicate with outlet manager, alert of new product and create new menu periodically in order to strive in the achievement of exceeding customer expectations. 与营运经理保持沟通交流,同时定期推出新产品及菜单以期超越客户期待值。 1.3 Strive for nil complaint on food quality, always look for improvement. 力争食品质量零投诉,追求食品质量提升。 1.4 Ensure that a harmonious working relationship is maintained with front of the house, in order to minimise dispute and ensure smooth operation. 确保厨房工作环境及关系和谐稳定以最大程度降低纠纷、确保工作顺畅。 1.5 Effective allocation of staff into appropriate working sections so as to utilise their strength and increase productivity. 有效地将每位员工分配至其最适合的岗位以利用其优势并增加生产力。 1.6 Be responsiveness to customer’s comments, liaise with unit manager and try to turn negative comments to positive. 及时应对客户评价,与餐厅经理共同并努力使一些顾客 的负面评价消除,转为好评。 1.7 Oversee the food preparation, cooking and presentation. Make sure and maintain style of presentation to meet highest customers’ satisfaction. 监管食品的准备、烹饪及出品。确保菜品的出品维持高标准并使顾客满意。 1.8 Advice Restaurant Manager on the selection of food items as requested and resolved guest complaints. 在食品方面给予餐厅经理适当的建议并且适当处理客户投诉。 OPERATIONAL EXCELLENCE 卓越营运 2.1 Ensure that all quality Company/Sector standards, in every aspect of the operation, are adhered to at all times. 在任何时候都坚持并确保公司的标准,在每个营运环节的运作。 2.2 Effectively communicate Company/Sector standards to your team. 在你的管理团队中有效地沟通并执行好部门标准。 2.3 Actively address all issues relating to non-adherence of Company/Sector standards. 积极记下所有没有达到公司/分部要求的问题。 2.4 Ensure that an effective system is in place for the filing, storage and retrieval of all documentation used in the day to day operation of the units. 在出现不遵守的公司/部门标准情况下积极处理有关的所有问题。 2.5 Respond to all internal requests for information about your units. 在你的部门能回应所有内部资料的要求。 2.6 Demonstrate effective planning and organising in all areas of administration. 在各方面的管理中证明有效的规划和筹备。 2.7 Plan and monitor annual leave to ensure the Unit is self-supporting during leave. 规划和监测年假,以确保在休假期间正常的营运。 2.8 Be aware of and adhere to legal and Company regulations relating to the following areas: 了解并遵守法律法规和公司规章涉及到以下几个方面: Health & Safety at Work健康及工作安全 Food Hygiene (by SSP and CIQ and Brand) 食物卫生(包括SSP,CIQ及品牌方面的食品卫生要求) Licensing Laws许可证经营相关法律 Employment Law就业法 Sales of Goods/Trades Description销售的商品/工种描述 Fire Regulations消防规例 Personnel Procedures人事程序 Training Guidelines & Procedures培训指导原则与程序 2.9 Ensure that the units are kept secure at all times. 在任何时候都确保本单位所有物品的妥善保管。 2.10 Ensure the necessary audits are carried out as per Sector/Brand standard. 确保必要的审计工作贯彻,按品牌标准来执行。 2.11 Lead by example and ensure all members of the team wear the correct, full, clean uniform whilst on duty. 以身作则,并确保所员工都穿上正确的、整齐、清洁的制服。 2.12 To take corrective actions for any instructions by SIA/CIQ which have been confirmed by management. 对所有由公司批准的SIA/CIQ的指示正确执行应对。 2.13 To ensure all kitchen equipment are well maintain and cleaned daily. Operating manual of each equipment to be briefed to all staff for right using skill to increase life spent. 确保所有厨房设备维护良好、每日清洁。确保给所有员工简单说明过每个设备的正确使用方法以延长设备使用寿命。 2.14 To make sure all form and records requested by SIA are filled up daily without fail. Inclusive staffs daily records, knife and equipment records, electrical item certificate. 确保每日SIA的表格及记录填写完成及正确。包括人员日常记录、刀具及设备记录、电器设备证。 Requirements 相关要求 1. Professional training in Food & Beverage discipline. 在食品饮料行业接受过专业训练 2. At least 15 years working experience in multinational hotel, Food / Beverage companies. 在跨国酒店或食品饮料公司工作至少15年 3. At least 5 years experience in similar position in multinational hotel or F&B companies. 在跨国酒店或食品饮料公司类似岗位工作至少5年 4. Preferable knowledge of F&B operation management, cost controlling, customer satisfaction, team building, and other items as needed. 掌握食品饮料公司营运管理、成本控制、客户满意度、团队建设等各方面的知识 5. Good numerical and statistical skills. 良好的数字及数据分析技能 6. Creative, proactive and outgoing. 有创意,有前瞻性,外向 7. Strong communication, interpersonal and negotiation skills. 优秀的交流与沟通技能 8. Have rich working experience and good cooking skill in Chinese cuisine and Western cuisine,especially in Chinese cuisine. 丰富的中餐及西餐经验,由其是中餐经验
